An increasing number of eateries focused on street food are opening in the French capital. Having become very widespread, this practice has to learn to coexist with French “bistronomie” and is conventional codes, such as the famous “plat du jour” (“dish of the day”), eaten around a laid table.So, how can we create a dialogue between these two worlds? Through my project, I have attempted to bridge the gaps between the codes of French cuisine and street food, by establishing a balance between heritage and architectural symbols; in other words, a new perspective on our culinary heritage, in line with the surrounding urbanism.
