Opting for natural, local materials, this project aims to design a bakery in line with the role of bread and food and the use of materials in our society. This conversion of a pizzeria in Clichy, a future neighbourhood of Greater Paris, takes advantage of the millions of tonnes of excavated earth produced by the works. The project allows for a dialogue between bread and earth (raw, baked, rough, glazed and unglazed), revealing the symbolism, aesthetics and production process the two share. The oven, which transforms both these archaic and universal substances through baking, distributes the spaces from the middle of the bakery: the breadmaking workshop is open onto the sales floor, eating area and street in order to give this craft the showcase it deserves.
